Au Gratin Potatoes
Ingredients:(makes 2 individual servings) Preparation Time: 40 minutes
3 or 4 yukon gold potatoes
1 onion carmelized
1/2 - 3/4 cup grated swiss or other cheese
1/2 cup cream, milk, or half and half
parsley
salt
pepper
Cooking Instructions:
Preheat oven to 425 degrees
Carmelize onion:
Thinly slice onion and cook in 1 tablespoon olive oil and 1 tablespoon butter over high heat for 3 - 5 minutes stirring often
Add dash of salt and pepper, reduce heat to low, and cook until soft and translucent brown
In two individual oven safe dishes, layer potatoes, carmelized onion, cheese, seasoning, and cream until filled. Be sure to add cream only a little at a time in each layer so gratin does not overflow excessively while baking.
Cook on baking sheet to catch any overflow for 25 - 30 minutes or until nicely browned
