Blackened Red Snapper
                                    Preparation Time:  20 minutes

For blackening, you can either make your own spice mixture, or use one of the readily available blackened spice mixes.  By making it yourself, you can make it as mild or spicy as you like.

Always buy fresh seafood and fish products.  Fresh fish should not smell "fishy", it should smell like the ocean, slightly salty, and slightly sweet.  If it has any other odor, do not buy it!
                  
 Ingredients:

1 nice sized filet or steak of fresh red snapper
blackened spice mixture
fresh squeezed lemon and lime juice


Cooking Instructions:

Check fish for bones that can easily be removed
Squeeze lemon and lime juice on both sides of fish
Coat generously with seasoning mix
For grilling ease, either use two skewers as shown, or use a fish grilling basket.  When using skewers, you may need to make starter wholes with a sharp knife to get through skin. 



Heat grill on high
If you are putting fish directly only grill, generously oil the grill first to prevent sticking.
Place fish on grill and cook for 5 to 7 minutes
Turn and grill other side for another 5 to 7 minutes

Fish should be flaky, but not falling apart when done.

Equal parts:
    Salt
    Black Pepper
    Cayenne Pepper
    Chili Powder
    Cumin
    Thyme
    Oregano
