Chimichuri Steak

                Preparation Time:   30 minutes

Ingredients:

Skirt steak
Juice from 1 large or 2 small limes
1 bunch cilantro, or
1/2 bunch cilantro and 1/2 bunch parsley
2 - 3 cloves of garlic
1 teaspoon paprika,
1/4 teaspoon salt
Olive oil

Preparation:
Chop cilantro/parsley and garlic.  Add paprika and salt and mix well.  Add about 3 Tablespoons of olive oil and stir together.  Let sit for 5 to 10 minutes.

Coat steaks on both sides, or pour 1/2 of mixture into a zipper plastic bag and let marinate at least 15 minutes, or up to 12 hours.

Grill on high heat five minutes per side for medium rare.

Drizzle a few tablespoons of chimichuri over steak, and put the rest on the table for spooning as you eat.
