Chicken Soup
Ingredients: Preparation Time: 30 min prep/3 hr cook
2 split chicken breasts
1 large onion chopped
4 pieces of celery
3-4 carrots sliced 1/4" thick
2 cloves garlic chopped
2 large potatoes diced
1/2 cup fresh chopped parsley (dry is okay, but only use 1/4 cup)
salt and pepper
poultry seasoning
8 cups chicken stock
2 Tablespoons olive oil
Cooking Instructions:
Rinse chicken and pat dry with paper towels
Remove any extra skin
Heat oil on medium high heat in large stockpot
Season both sides of chicken with salt, pepper and poultry seasoning
Place chicken, skin side down in pot and brown for about 2 minutes, turn and brown second side
Remove chicken to plate while you start to cook the vegetables (you may need to add a little more oil if pot becomes dry-do not let vegetables burn)
Add vegetables and garlic to pot and season with salt and pepper, add parsley
Cook vegetables, stirring frequently for about 3 minutes
Put chicken back in pot, skin side up
Add stock and stir
Lower heat to medium low to low and simmer 2 hours
Take chicken out of soup to remove meat from bone
Make sure to remove any small pieces of bone or skin that may have come loose from stock
Add chicken meat back to pot, and cook on low for 1 more hour
***You can add rice or pasta to this soup in the last hour of cooking for some substance
