Citrus Shrimp



This simple recipe makes your shrimp as delicious as lobster!!
      
                                                                                            Preparation Time:  30 minutes

Ingredients:

1 pound jumbo shrimp
2 cloves minced garlic
2 fresh limes
2 fresh lemons
1/4 cup tarragon
dash of sea salt & black pepper
4 tablespoons olive oil
4 tablespoons melted butter

Cooking Instructions:

Remove shrimp shells and devein (if you are going to serve shrimp over pasta or rice, remove tail also)





Place shrimp in a shallow bowl and add garlic, juice from 1 lemon and 1 lime, 1/2 of the tarragon, salt and pepper, and 2 tablespoons of olive oil and mix well so that shrimp are well coated with seasoning mixture.  Cover and place in refrigerator for 15 to 20 minutes.

At this point prepare pasta or rice if you are going to use it.

Heat 2 tablespoons of olive oil in large frying pan on medium high heat.  Add shrimp (not liquid) to pan and cook for about 2 minutes, turn over to cook other side for another 2 minutes or until shrimp are cooked through.  Do not overcook shrimp or they will become tough.  They should just be pink, not browned at all.


While shrimp are cooking, melt butter with remaining tarragon, lemon and lime juice and pour into serving bowl.  Add cooked shrimp to butter and stir to coat.





Serve with fresh bread or pasta or rice.








This recipe is also great for grilling.  Instead of cooking shrimp in frying pan, place them on skewers and grill on high for 4 to 5 minutes.









To devein shrimp, simply run a sharp knife down the back and remove any residue with a paper towel.
