Classic Chicken Salad

Ingredients:                                                      Preparation Time:  1 hour
1 lb fresh boneless chicken breasts
3 stalks celery
1 small sweet onion
3/4 teaspoon salt
1/2 teaspoon black pepper (use a pepper medley for variety)
2 Tablespoons parsley
Mayonnaise

Cooking Instructions:
Cook chicken breasts in boiling water with 1/2 teaspoon salt about 15 minutes or until cooked through, but not overcooked.  Cooking time will depend on thickness of breasts you are using.

Remove from water and let cool
Chop celery and onion into small cubes and place in large bowl
Add 1/4 teaspoon salt, pepper, and parsley
Cube cooled chicken breasts into about 1/2" pieces and mix into bowl with celery & onion mixture until evenly distributed
Mix in mayonnaise a little at a time until you reach your personal texture preference.  If you are going to refrigerate before using, you may need to add a little extra mayo as some will absorb into chicken as it rests.

You can also add extras to this recipe such as raisins, walnuts, apple pieces.  This is a great recipe to make your own!!  I have sometimes added some spice to make a cajun style chicken salad.
