How to choose vegetables

When choosing fresh vegetables always check for freshness by looking first at the firmness.  You do not want vegetables that are bruised or overly soft.  The best way to check freshness is to look at the root or base (depending on the vegetable).  It should not be dry or brown. 

When purchasing leafy vegetables, make sure to check the backs of the leaves for insects and/or eggs.  Many grocery stores are using vegetable misters which they say keeps vegetables fresh.  This is just not true.  Unless the vegetable root is actually in water, the only thing this is doing is getting you wet!

It is also a good idea to become friendly with the person who puts the stock of vegetables on the shelves.  If you don't see something you like, just ask, and if you have a good relationship with the produce person, he or she will usually be able to find what you are looking for.

The key is to not be afraid to touch, smell, and ask!!
