Mango Salsa
Preparation Time 10 minutes + 1 hour to refrigerate
This is a great recipe to use as a compliment to fresh fish and chicken dishes, especially ones that are a little on the spicy side like blackened red snapper.
Ingredients:
Ripe, but solid mango
Plum tomato
Orange/Yellow Tomato
Green onions
Fresh lime juice
Jalapeno
1/2 teaspoon Mexican Oregano
1 Tablespoon cilantro
1 Tablespoon white balsamic vinegar or
1 Tablespoon sweet white wine
Preparation:
Dice mango and tomato into 1/4" cubes
Slice green onion, white and green parts
mince about 1/4 of a medium sized jalapeno
Place in a large bowl and add oregano, cilantro, lime juice and vinegar/wine and mix well.
Cover and place in refrigerator for at least one hour so flavors blend. Stir and serve.
