Panko Crusted Fried Shrimp
Ingredients: Preparation Time: 30 minutes
Jumbo shrimp cleaned and deveined 3 eggs 1/2 cup flour Panko bread crumbs 1/8 teaspoon sea salt 1/8 teaspoon black pepper Corn, vegetable, or canola oil for frying Lemon wedges
Cooking Instructions: Whisk together eggs, flour, salt and pepper into a smooth batter Heat about two - three inches of oil in heavy pan - make sure oil only comes half way up the pan, as the oil will expand and overflow if your pan is too shallow Dip shrimp into batter and then coat heavily with panko bread crumbs Fry in oil in small batches until shrimp are golden brown Keep cooked shrimp in a warm oven while you finish frying the rest of your shrimp
Serve with lemon wedges and cocktail sauce
Simple Cocktail Sauce: 1 tablespoon hot horseradish 1/4 cup ketchup juice of 1/2 lemon
