Pepper Steak
Preparation Time: 40 minutes
Ingredients:
1 lb tender steak, like skirt steak or tenderloin
Variety of bell peppers for color
1 large sweet onion
garlic
parsley
paprika
salt and pepper
1 tablespoon olive oil
Cooking Instructions:
Slice steak into 1 inch strips
Slice peppers and onion into equal sized strips
Slice garlic paper thin
Season beef with 1/2 of parsley, paprika, salt and pepper
Heat olive oil in large fry pan on high heat
Add beef strips and quickly sear meat until brown, but not cooked through. Remove meat from pan, leaving liquid.
Reduce heat to medium high. Add peppers, onions and garlic. Add remaining seasonings and cook until vegetables are beginning to soften.
Add meat back to pan and stir to mix through. Cover and cook for about 10 minutes or until meat and vegetables are cooked through.
Serve over rice
