Pork Pinwheels                           Preparation Time: 40 minutes

Ingredients:

Center cut pork loin roast, trimmed as shown


Fresh baby spinach
Roasted peppers, either fresh, or jarred in oil, not marinaded in vinegar.
Provolone Cheese
salt and pepper
parsley
1 tablespoon olive oil
1 cup red wine

Cooking Instructions:

Begin by roll cutting pork roast (click here for instructions on how to cut)
Lay with outside down and generously season with salt, pepper and parsley.



Next cover with roasted red peppers, then shredded provolone cheese, and lastly the spinach.

Carefully roll beginning with the most narrow end until a nice round stuffed roast is made.
Tie with kitchen string about every two inches.  Make sure string is tight, and evenly placed, as this will be your cutting guide for making pinwheels.

Using string as center mark, cut into individual pinwheels as shown.


Heat oil in large heavy frying pan on medium high heat and brown one side (about 5 minutes) then turn and brown second side for about 5 minutes.



Add wine (use beef stock if you do not want to use wine), cover, and cook about 15 to 20 minutes or until pork is cooked through.



Remove pork to plate, add about 1 tablespoon of butter in small pieces into pan and stir.  Reduce to a nice glaze and pour over pinwheels when serving.
