Potato Leek Soup


Ingredients:                                                                  Preparation Time:  30 minutes


8 medium sized potatoes, peeled and cut into 2 inch cubes
4 Leek stalks, washed, sliced
1/4 cup butter
3 1/2 cups chicken stock
1/2 cup milk, cream, or half and half
1 teaspoon salt
1 teaspoon black pepper

Cooking Instructions:

Melt butter in 3-4 quart saucepan and add leeks
Cook until tender and translucent
Add chicken stock and potatoes and cook about 20 minutes until potatoes are tender
Remove about half of the potatoes and set aside
Puree remaining potato mixture
Add reserved potatoes, salt, pepper, and cream and heat through
