Roasted Root Vegetables

      

  This is a great recipe to use up that leftover sweet potato and a little of this and that.

You can use any vegetables and tubors you like.  I even use fruit like apple and pear to add a little variety.

Ingredients:

Salt
Pepper
Fresh Rosemary or any other herb of your choice
Any vegetables of your choice such as turnip, parsnip, squash, onion, peppers, carrots.  Try to use vegetables that are similar in cooking time so that you don't end up with some that are overdone.  If you are going to add a faster cooking vegetable, just add it to the pan a little while after the harder vegetables have begun to cook.

Cooking Instructions:

Cut all vegetables into equal size pieces.  I leave them a little large (about 2" pieces)
Place in a shallow baking dish.
Sprinkle with salt and pepper
Generously season with herbs
Drizzle with olive oil
Mix together so that all vegetables are coated with oil and seasoning.

Bake in 350 degree oven until all vegetables are cooked through, usually about 40 minutes.

This is an incredibly healthy way to get a lot of vegetables into your diet!
