Ingredients:
1-2 lbs fresh Italian sausage 4-5 Slices peppers of various color 1 large sliced sweet onion 3 cloves garlic sliced thin 1 Tablespoon parsley 1/2 teaspoon basil 1/2 teaspoon oregano 3-4 Tablespoons olive oil
Cooking Instructions:
If you are using a sausage ring instead of links, place skewers through sausage so it stays together while cooking. Heat 1 tablespoon of olive oil in large frying pan and place sausage in pan. When color starts to wrap around sausage, turn and brown other side. About 10 minutes per side.
While sausage is browning, cook all vegetables with seasonings in large shallow pan in 2 Tablespoons of olive oil on medium high heat until peppers begin to soften. I like to slice sausage, but it is a personal preference. You can leave ring or links whole if that is how you like it. Place sausage, which is about 1/2 cooked (should still be a little on the pink side), on top of peppers and onions, cover, and cook for another 10 - 15 minutes.
Stir to mix completely, adding a little olive oil if needed.
Serve piping hot with warm bread or pasta.
