Semolina Bread
Preparation Time: 3 hours total
Ingredients:
1 1/2 cups semolina flour
1 1/2 cups bread flour
1 Tablespoon salt
2 teaspoons sugar
1 egg
1 pkg dry yeast
1 cup warm water
2 Tablespoons olive oil
Cooking Instructions:
Dissolve yeast in 2 oz warm (110 degrees) water and let activate until foamy.
Mix flours, salt, remainder and sugar in mixer bowl with dough hook.
Add egg, remainder of warm water and olive oil and mix on low speed until ball forms, about two minutes.
Place in an oiled bowl, cover with plastic wrap and towel, and let raise in a warm place until doubled in size.
Turn out onto well floured surface, and knead for two minutes. (See recipe for Italian bread for kneading instructions)
Form into loaf, lightly oil top surface, cover with plastic wrap and towel, and let raise again until double in size on baking sheet.
Preheat oven to 400 degrees.
Place baking sheet in upper half of oven and cook about 30 minutes. Bread is done when nicely brown on the outside, and sounds hollow when tapped.
