Spinach & Apple Salad w/spicy warm vinaigrette
Ingredients:
Salad:
1 bag baby spinach leaves
1 red apple, peeled, cored, and cubed
several thin slices of red onion
Dressing:
1 slice pancetta or 2 oz ham, diced
1/8 cup olive oil
1/4 cup balsamic vinegar
dash salt and black pepper
dash of rosemary, or one twig of fresh rosemary, chopped
sliver of jalapeno pepper, diced very small
Preparation:
Rinse spinach and put in large bowl
Add cubed apple and sliced onion and mix through
Set aside until you are ready to eat as the warm vinaigrette will wilt the spinach fairly quickly.
In a small pan, heat pancette or ham until warm (do not overcook as it will become tough)
Add olive oil, vinegar, salt and pepper and stir until blended. Add rosemary and immediately remove from heat.
Add chopped jalapeno just before adding to salad.
When adding to salad, pour on the sides of the bowl, not directly onto the spinach, and gently mix in until salad in coated with vinaigrette. Do not saturate this salad.
