Traditional Stromboli
Ingredients: Preparation Time: Dough 1 hour Cooking 1 hour 1 package yeast pinch of sugar 1 cup warm water 2 3/4 cups all purpose flour 2 teaspoons salt 2 tablespoons olive oil
Salami Ham Provolone Mozzarella Pepperoni (optional)
Cooking Instructions:
Dough - Heat 1/2 cup water to 110 degrees and add yeast and pinch of sugar, stir until dissolved and let rest about 10 minutes until foam forms on top indicating activation of yeast. Place dry ingredients in mixer with dough hook and mix together before adding wet ingredients. Add olive oil yeast mixture, and remaining 1/2 cup warm water and mix on low speed until a smooth ball forms. Add more flour a little at a time if necessary. Place dough in an oiled bowl and cover with plastic wrap and dry kitchen towel and place in a warm place to rest for 20 minutes.
Preheat oven to 450 degrees
Turn dough out onto well floured surface and begin to gently work dough into a large rectangle about 1/4 inch thick or less. Layer meat and cheese over entire surface of dough and roll (jelly roll style). Make sure bottom edge is sealed well and place seam side down on cookie sheet. Drizzle with olive oil and spread evenly with a brush or your hands. Bake for 15 - 20 minutes until golden brown. Let cool before cutting
